Strawberry Short Cake
Biscuit Ingredients:
2 3/4 Cups - All Purpose Organic Flour
1/4 Cup - Organic Sugar
4 Tsp - Baking Powder
1 Tsp - Salt; Fine ground
1/2 Tsp - Baking Soda
1 Cup - Organic Buttermilk; Cold
1/4 Cup - Unsalted Organic Butter; Cold & Cubed
2 Tbsp - Organic Heavy Cream
Organic Sugar - For Sprinkling
Filling & Topping Ingredients:
6 - 7 Cups - Organic Strawberries
1 Cup - Organic Heavy Cream
1/4 Cup - Organic Sugar; for coating strawberries
2 Tbsp - Organic Sugar; for whipped cream
1 Tsp - Organic Pure Vanilla Extract
Directions:
In a large bowl, mix together the 1/4 cup of sugar and cut strawberries. Mix until evenly coated, cover, and place in the refrigerator to sit. Strawberries will settle and release their juices!
Preheat the oven to 400 degrees. In a 2nd large bowl combine flour, sugar, baking powder, salt, and baking soda. Whisk together well. Add cubed cold butter to dry ingredients and incorporate together with a pastry cutter until course crumbs form. Add the buttermilk and fold together with a large spoon being careful not to overwork the dough. *Dough should be shaggy, crumbly, and slightly wet when done.
Flour a flat work surface and pour dough and dough bits on to it. With generously floured hands carefully bring the dough together. *Have extra four nearby to reapply to hands and work surface while bringing dough together.
Once dough is together, use a rolling pin to flatten dough into 3/4" thick rectangle like shape. Fold one side then the other into the center, turn horizontally, and using the rolling pin flatten dough to 3/4" thick rectangular shape. Repeat folding sides into center, rotating the dough, and flattening into rectangular shape and additional 4 times.
Using a biscuit cutter or circular cutter (no larger that 3" wide) cut out biscuits. *Tip - Do not twist cutter when cutting into dough* Re-roll and flatten and scrap dough to cut more biscuits
Arrange biscuits on a parchment lined baking sheet. Make sure arranges biscuits are touching each other. Brush the top of the biscuits with heavy cream and sprinkle with sugar. *Course is best
Bake for 18 - 22 min or until the tops turn golden brown. Remove from oven and allow to cool before assembling. *At least 10 min
While biscuits bake prepare the whipping cream by combining the heavy cream, sugar, and vanilla extract and whisking with a hand mixer or standing mixer on medium high until soft medium peaks form *About 3 min
Assemble cakes when ready to serve by slicing biscuits in half, layering the strawberries and whipping cream in between biscuit halves, and topping with more strawberries and whipping cream! Enjoy immediately!
