Organic Salsa Verde Recipe

  1. Preheat the oven to 450 and line a baking sheet with parchment paper.

  2. Prep, and chop vegetables: Remove husks from tomatillos, rinse under water and then place whole on baking sheet. Chop onion into large chunks, place on baking sheet. Slice the top off of Jalapeno and then in half vertically and remove seeds. Place halved jalapeno onto baking sheet. drizzle veggies with olive oil and toss or flip to coat. Wrap 2 cloves of garlic in foil and place on baking sheet for roasting.

  3. Roast veggies in oven for 15 min, or until the tomatillos are soft!

  4. When done remove from oven, peel roasted garlic and place all roasted veggies in food processor. Add 1 - 2 tbsp of water and pulse until desired texture is achieved. Salt or season to taste and serve! Or add to desired dish!
