Nectarine Cucumber Salad

INGREDIENTS:
1/4 cup finely sliced organic red onion
3 ripe organic nectarines
4 small organic cucumbers
1/8 cup organic basil leaves, torn
1/4 –1/2 cup organic feta crumbles or your favorite cheese.
Dressing:
3 tablespoons olive oil
2 tablespoons organic cooking champagne, cooking sherry, or apple cider
2 teaspoons organic honey
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon organic chili flake
Directions:
Slice organic red onions & place in water with salt, soak 10-15 minutes.
Whisk dressing ingredients together in a small bowl. Set aside.
Slice your nectarines & cucumbers 1/2 in thick - arrange in bowl or serve over greens.
Rinse & drain your onions- scatter on over the top of salad.
Top salad with torn basil, feta, dressing, and chili flake.
